How do you like your chocolate? Benevolently dark, sour and sweet, studded with raisins or nuts, milky and oozing deliciously from your plate… No matter, how you like your chocolate, it’s one of the most decadent sensory indulgence in anyone’s palette. It is no wonder why it was anciently referred to as food only fit for the gods. Last month, our team at Nairobi Serena Hotel in Kenya had the honor of hosting Pastry Chef extraordinaire, Chef Minette Smith- The Head of Chocolate Academy from South Africa. During her visit, Chef Minette connected with other pastry chefs in Nairobi to extend her knowledge in the preparation of amazing desserts using the Callebaut brand of chocolate. Callebaut is the world’s most premium chocolate brands industrially used in the making of the finest pastry and desserts. During her one-day training session, Chef Minette not only gave lessons on the different types of chocolate, their origin, tempering techniques but also, gave an in-depth explanation of what distinguishes quality chocolate from its inferior underlings. The team at Nairobi Serena Hotel had an opportunity to advance their knowledge on various techniques in creating fine desserts and pralines, bonbons for turndowns treats and novelty items especially refined dessert menu ideas for the upcoming Easter holidays.  The new dessert menu and the Easter treats are bound to leave chocolate lovers and diners alike in salivating reverie.
