This July, Clico celebrates its 12th Birthday, and what a remarkable journey its been over the last 12 years!

It seems like yesterday I took on the challenge on turning a tumbling Cape Dutch house in Rosebank into one of the only boutique hotels in the area. Many people always ask me, “Why did you call it Clico?” – and it’s simply a version of myfavourite Champagne – Veuve Clicquot.

Clico’s growth over the last 12 years has been evolutionary. In 2006, our hotel opened its doors and it wasn’t long before our growing number of guests asked for more, and so in 2010 we added our conferencing facility. In 2014 we gave ourselves a décor facelift and also installed a borehole and generator to mitigate the rolling blackouts and possible drought. It served us well, because in 2015 our guests once again asked for more and we opened Clico Restaurant.

We’ve made it through the economic crisis, achieved our Chaîne des Rôtisseurs accolade, top-ratings on Trip Advisor and made some incredible friends along the way – from all around the world. To me, Clico is still the embodiment of “myneighbours house” from my childhood – warm, inviting, lights-on and special. But it really is thanks to all of our guests over the years – each and everyone one of you – who have made our business thrive.

I look forward to seeing you at Clico to celebrate alongside us – perhaps, with a glass of Veuve Clicquot!

Winter is all about slow cooking

If you think staying home is the best way to stay warm this winter, then think again. Chef Marnus has launched his new winter menu packed with deep, comforting flavours specially crafted to warm the soul. Dishes to look forward to includeslow roasts, deep marinades and braised stews.

“Our latest menu features deep flavours to induce a sense of warmth and comfort. We have chosen the best seasonal ingredients and prepared them with techniques that are harmonious with winter,” says Chef Marnus.

His top winter picks off his menu include the Salmon Gravalax which boasts a beautiful array of winter vegetables as a light, fresh way to start the meal, followed by the Braised Lamb Shoulder which is marinated for three days in the fridge, slow roasted and served with an extraordinary beetroot jus.

Keeping his finger on the pulse of the international food scene, Chef Marnus has spent many months preparing and using the technique of fermentation to bring extra flavour and complexity to his dishes. The fermentation of his lemon and feta puree started in spring and was nurtured right through to winter, bringing a well-balanced salty, creamy and zingy element to his lamb dish.

“This menu is all about winter and allowing our diners to feel the comfort that food brings in the colder months. Braised meats, roasted vegetables and hearty purees – everything speaks to warmth, comfort and contentment,” he says.

So, whether you like savouring one or two dishes on a night out, or if you prefer a full degustation experience, Clico Restaurant offers both an A La Carte menu option, as well as a six course, wine-paired tasting menu.
